CITRUS CHICKEN STIR FRY
INGREDIENTS
- 2 -3 Chicken Breast (boneless + skinless) – washed and cut into strips
- 1 -2 tsp Walkerswood “Mild” Jerk Seasoning
- 1 tsp – fresh grated Ginger
- 1 Clove Garlic – minced
- 2 tbs – Walkerswood Orange Marmalade
- 1 Med Onion – sliced
- 1 Med Sweet Pepper – sliced into strips
- 1 large Carrot – peeled & cut into strips
- 1 Stalk Escellian – cut into strips
- 2 tsp – Soya Sauce
- 1 tbs Vegetable Oil
DIRECTIONS
- Season Chicken with Mild Jerk Seasoning and allow to marinate minimum half hour
- In wok / saute pan heat the Vegetable Oil and saute the Ginger and Garlic until fragrant
- Add Chicken and stir fry until golden brown - 5 minutes
- Add remaining vegetables, soya sauce and ornage marmalade
- Stir until Marmalade melts and glazes everything
- Serve over white rice or noodles
